Vegan Yogurt & Berry Parfait | Summer Tiramisu

I LOVE dessert (who doesn't?!) and I love tiramisu – rich, decadent, creamy. However for summer it's a bit too heavy for me, so this recipe is sort of a lighter alternative to classic tiramisu – a "summer tiramisu" if you will.

It consists of yogurt layers (one chocolate-y and creamy, the other one more on the light and fresh side), vegan biscuits, mixed berries, and some granola and more fruits on top. Besides tasting heavenly, this dessert is low in fat and sugar, and high in protein!


VEGAN YOGURT & BERRY PARFAIT

Ingredients

2 cups vanilla soy yogurt (or plain soy yogurt + 2 tsp vanilla essence)
2 cups chocolate soy yogurt *
2-3 cups fresh or frozen berries (blueberries, strawberries, raspberries, blackberries, currants...)
16 vegan biscuits 
vegan chocolate granola
vegan strawberry sauce
berries for garnishing

* I made this by mixing 2 cups of vanilla soy yogurt with 2 tbsp of cacao powder and about 1/4 cup of melted dark vegan chocolate, and whisking everything together!

Instructions

Place frozen berries in the microwave for about 60 seconds or until defrosted while you prepare your other ingredients, or use fresh berries instead.

To assemble your parfaits, take four glasses (I used whiskey glasses), and crumble about 2 biscuits into each one. Place about 3 tbsp of fresh or frozen berries into each glass. 
Next, spoon 1/4 cup of the vanilla soy yogurt into each glass. (I actually did two parfaits with vanilla yogurt first, and two with chocolate yogurt first.)
Again, add 2 crumbled biscuits into each glass.
Add another 3 tbsp of berries into each glass
Then spoon a layer of 1/4 cup of the chocolate yogurt into each glass. (Again, I swapped the order of the yogurt flavours with every other parfait.)
Lastly, finish each parfait with some chocolate granola, strawberry sauce and fresh berries on top.

Serve immediately, or place in the fridge or even the freezer for about 30 minutes before serving.
