Another Sunday, another savoury recipe!
The traditional Full English Breakfast usually consists of baked beans, fried, poached or scrambled eggs, sausages, bacon, grilled tomato, fried mushrooms, and toast.
For our vegan, healthy and delicious version of the popular hearty breakfast we use homemade baked beans, scrambled tofu, grilled tomatoes, fried garlic mushrooms, vegan sausages and toasted bread with vegan butter.
This recipe will take you a little longer and is very filling – perfect for a lazy Sunday morning!

Ingredients
Baked beans:
1/2 white onion
1 x 400g cannellini beans
2 tbsp ketchup (I used 1 tbsp regular and 1 tbsp bbq ketchup)
1 tbsp tomato paste
1 tbsp mustard
1 tsp paprika powder
1 tsp smoked paprika powder
1/4 tsp chili powder
1 tsp brown sugar
Scrambled tofu:
1 x 200g pack of medium firm tofu
1-2 garlic cloves, crushed
1/2 white onion, chopped
1/2 tsp of turmeric for colour
1 tsp curry powder
1 tsp paprika powder
1/2 tsp of kala namak (Indian rock salt that smells like egg)
freshly ground black pepper
1 tbsp olive oil
optional: cherry tomatoes, chopped
optional: olives, chopped
Grilled tomatoes:
1 x 250g pack of cherry tomatoes
a splash of water
a splash of balsamic vinegar
Fried mushrooms:
1 x 250g pack of button mushrooms
1-2 garlic cloves, crushed
1 tsp olive oil
1 tsp maple syrup
1 tbsp soy sauce (use tamari soy sauce for gluten-free option)
salt and pepper to taste
also:
4 vegan sausages
toasted slices of bread or toast (gluten-free if needed)
vegan butter for the toast
optional: store-bought or homemade vegan bacon
Instructions
First, marinate the scrambled tofu. Drain the tofu and place into a bowl. Mash the tofu with a fork or crumble in your hands. Add the remaining ingredients and set aside.
For the baked beans:
Chop the remaining half of your onion and add to a small saucepan. Heat up and cook for a couple of minutes, or until the onion is soft and translucent. Drain your beans and add them to the saucepan. Stir in the rest of the ingredients and bring to a boil. Reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally. In the meantime, tend to your garlic mushrooms.
For the baked beans:
Chop the remaining half of your onion and add to a small saucepan. Heat up and cook for a couple of minutes, or until the onion is soft and translucent. Drain your beans and add them to the saucepan. Stir in the rest of the ingredients and bring to a boil. Reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally. In the meantime, tend to your garlic mushrooms.
For the mushrooms:
Clean and cut your mushrooms into slices. Heat up olive oil in a large frying pan and cook the mushrooms for about 5-10 minutes, or until they are tender and well browned. Then add crushed garlic cloves, soy sauce and maple syrup, stir well and cook for another couple of minutes.
Halfway through, throw in your sausages to fry along with the mushrooms once they have shrunk a little!
For the tomatoes:
Wash the tomatoes and place into a frying pan. Add a splash of water, turn up the heat to medium-high and close the lid. Allow to cook for 5-10 minutes, or until the tomatoes turn super soft and start to brown.
For the scrambled tofu:
Gently heat the olive oil in a frying pan, and stir in all marinated ingredients. Stir fry for about 5 minutes, stirring occasionally.
To assemble:
Arrange the mushrooms, sausages, scrambled tofu, baked beans, tomatoes, and toasted bread slices on two plates and serve with fresh orange juice.
TIPS:
- Use any leftovers to stuff into a pita bread or tortilla wrap!
- Save time by preparing the baked beans in advance and reheating when you are ready to serve.
- Also, use all four of your heating plates: the smallest for the baked beans, one for frying the mushrooms and sausages, one for grilling the tomatoes, and one for scrambled tofu. That way your food will still be warm once you're done cooking :)
