What's on the menu?
- On Monday I cooked this dish with cumin braised carrots and chickpeas, which I served with millet.
- On
Tuesday I made a yummy fried rice dish with carrots, leek, celery, tofu, mung bean sprouts, peanut butter, ginger and soy sauce. Yum yum yum! Similar recipe: here.
- On Wednesday my boyfriend and I went out to eat at an Italian buffet (all you can eat for just 9 euros!!) where we ate two plates full of delicious antipasti and a slice of vegan pizza. Yummo!

- On Thursday I made myself a super lazy meal: store-bought gnocchis (vegan of course) with zucchini, onions, garlic, salt and pepper. Simple and super good. Similar recipe (without Parmesan though): here.
- On Friday
I visited my aunt and uncle, and we made a delicious Mediterranean pasta salad with cucumber, olives, sun-dried tomatoes, fresh tomatoes, pine nuts, shallots, garlic, lemon juice, herbs, salt and pepper. Similar recipe: here.

On the weekend I then visited my grandma, and we made a super yummy rice salad with basmati rice, sweet corn, cucumber, spring onion, chicory, red bell pepper, vegan mayo, herbs, salt and pepper (similar recipe: here)
as well as my usual curry with basmati rice, zucchini, hokkaido pumpkin, red bell pepper, chickpeas, and coconut milk (similar recipe: here).
