Gingerbread Chai Latte (vegan)

Cold days call for cosy afternoons with a gingerbread chai latte! This recipe is a healthy version of common drinks with loads of sugar and fatty whipped cream on top (*cough* Starbucks *cough*). It's sugar free, easy to make, and vegan. Perfect for those days when you want to cuddle on your couch and enjoy something sweet but guilt-free!


GINGERBREAD CHAI LATTE

suitable for: vegan, lactose-free, gluten-free, soy-free, nut-free, sugar-free


Ingredients:

1 cup (250ml) water
1 black tea bag, or Roiboos tea for caffeine free version

1 cup (250ml) unsweetened almond milk
4 dates, deseeded
1 tsp cocoa powder
2 tbsp gingerbread spice *
1 tsp vanilla extract

about 1/2 cup (125 ml) unsweetened almond milk for frothing

optional: 1-2 tsp 100% pure maple syrup

Instructions:

Add 1 cup almond milk, dates, cocoa powder, gingerbread spice and maple syrup to a blender or food processor. Blend until smooth and frothy. 

Place 1 cup of water in a small saucepan, along with the tea bag. Add the blended milk mixture to the saucepan, and heat it up.

Once the gingerbread milk is hot and about to boil, pour into a mug or glass. Top with a dollop of almond milk foam, and a dash of cinnamon. Serve with gingerbread :)

TIP: To make a coffee gingerbread latte, simply replace the teabag with 1/2 cup fresh espresso!


Make your own gingerbread spice blend:

2 tbsp ground cinnamon
2 tbsp ground ginger
1 tbsp ground allspice
1 tbsp ground cardamom
1 tbsp ground nutmeg
1 tbsp ground cloves
1 tbsp ground star anise
Pinch of black pepper 

Mix all the spices in a small bowl. Transfer to an airtight jar. That's it! 

TIP: Use a 2-inch piece of fresh ginger, peeled and minced, instead of ground ginger for more spice!
