here is another week menu for you! A lot of home cooking happenin' here :)

What's on the menu?
- We started the week off with a quick pasta dish: whole-grain spelt spaghetti with tomato sauce, avocado and ramson pesto and a big salad. Super simply and delicious.
- On Tuesday I made super yummy fried polenta slices (seasoned with veggie broth, paprika, chili and loads of herbs) with a big batch of green veggies. After dinner we went to visit my parents where we had apples, grapes, dates, salted nuts and chocolate covered rice cakes for a snack, yum! :)
- On Wednesday I made a "de-constructed" Shepherd's Pie: glazed carrots, cooked green beans and peas, and potato mash with scallions served on a plate (without baking in a pie dish beforehand).
- Thursday was my boyfriend's turn to cook, and he made a mixture of our Thai coconut potatoes and a regular vegan scalloped potatoes: so basically scalloped potatoes baked in coconut milk. We paired this with another big salad for some greens. Similar recipe: over here.

- On Friday we made another batch of fennel and lentil salad with roast potatoes adapted from the recipe book Eat Smart – my boyfriend insisted because he liked it so much last week, haha!
- On the weekend we made the roasted pepper + onion pesto tart from Eat Smart, as well as improvised savory pancakes or crepes or whatever you want to call those flat round thingies with a creamy "leftover veggies" filling. And we also went to a birthday party where we were fed with all sorts of delicious vegan food!
