To me, rice pudding is the ultimate comfort food - especially in winter, and especially with some melting chocolate on top, nom nom.
This childhood classic can easily be turned vegan. The only slight negative to such recipes is that dairy-free rice pudding (unless you use coconut milk) will have a light beige/brownish colour to it as you can see in the pictures, but as long as it tastes amazing, that should be an issue, right? :)

ORANGE RICE PUDDING
Preparation time: 30 mins
Main ingredients: rice, milk, orange
difficulty level: easy

suitable for: vegan, lactose-free, gluten-free, nut-free, soy-free, sugar-free, low-fat
Ingredients
250g short grain rice *
1 litre rice milk (or any other plant-based milk)
pinch of salt
juice of 1/2 orange
1/2 - 1 tsp vanilla powder OR 1 tsp vanilla essence
Optional condiments:
orange zest
orange oil
cinnamon
raw cane sugar, brown sugar or coconut sugar
dark chocolate (I use vegan almond orange chocolate)

* dry and uncooked, that is.
Instructions
Bring the rice milk and a pinch of salt to the boil.
(Substituting a can of coconut milk for some of the rice milk for a creamier outcome.) Add the rice and turn lower the heat, stirring frequently. Close the lid, and keep checking on the rice every now and then. Try putting a couple of cinnamon sticks in the pot while the rice is cooking. Adds another level of flavour. Yum!
After about 20 to 30 minutes your rice pudding should be ready, the consistency creamy and thick. Right when it is ready, you can add the orange juice and the vanilla powder. Stir.
Definitely best served with cinnamon and chocolate! Yesss!
I served mine with an orange slice, a bit of orange oil, cinnamon, a pinch of raw cane sugar (I used 1 tsp vanilla in the rice pudding, and that's plenty of sweetness!), orange zest and a piece of orange chocolate. Shredded coconut would taste great too! Or raisins, caramelized nuts, warm berries, maple syrup, nut butter... perfect recipe to play around with :)
