Cantaloupe Lime Ice Cream (raw, vegan)

This Cantaloupe Lime (Cantalime?) Ice Cream is more on the sorbet side of dairy-free ice cream. It's refreshing, cooling, and super summery. 

I've cut a tiny cantaloupe into pieces and froze them overnight. The next day I've added that (around 1 cup) into the blender, added some frozen banana for more creaminess as well as lime for some zest, and blended until a creamy, refreshing, naturally sweet (no additional sweetener needed) ice cream was the result!


Ingredients

2 ripe bananas, peeled and frozen
1 cup frozen cantaloupe melon
juice of 1/2 - 1 lime
1 tsp coconut sugar or maple syrup (optional)

Instructions

Break your frozen bananas and melon into pieces if they aren't already chopped. Add them to your food processor or high-speed blender (bananas first) and process until it begins to become creamy. Add the frozen melon, then add coconut blossom sugar and lime juice. Blend until there all frozen fruit pieces are smooth and ice-cream-y.

I have to admit, my Honeydew Ice Cream is still my favourite melon ice cream, but paired with sweet lime juice, cantaloupe melon makes for a great fresh and frothy summer sorbet :)
