As of yesterday, I'm back home and back on track with the linky party. For this week, I chose a recipe for dairy-free feta cheese because way back in my early blogging days, I made an attempt at vegan feta cheese myself, but this one from Sprinkle of Vanilla Sugar looks even better than my own version, so I have to try it sometime and you should too!

Quick 3-ingredient ice cream without ice cream maker
Preparation time: 5 mins + 3 hours freezing time
Main ingredients: papaya, banana, passion fruit

gluten-free, nut-free, soy-free, paleo, raw food, low-fat
Deliciously sweet with musky undertones and a soft, butter-like consistency, papaya is best combined with a zesty taste such as lime or passion fruit (similar to watermelon that also tastes best when paired with lime, passion fruit, mint or basil!).
Today, I have made a simple ice cream with ripe papaya. The tartness of passion fruit and lime juice in the ice cream balances the sweetness from the papaya and lends a tropical flavour to the ice cream.

When my former boss asked me to help with their office moving - what they meant was: make muffins as refreshment. So of course I agreed. Any reason to make muffins is a good reason!
And since this was quite short notice, I quickly brainstormed, and the first thing that came to my mind was: Marble Muffins! Which brought back some childhood memories because for some reason marble cakes remind me of the simple joys of childhood... just the basics: flour, sugar, "milk", "eggs", and chocolate. Yum!
These muffins are quick to make and also very quickly devoured :)

This Cantaloupe Lime (Cantalime?) Ice Cream is more on the sorbet side of dairy-free ice cream. It's refreshing, cooling, and super summery.
I've cut a tiny cantaloupe into pieces and froze them overnight. The next day I've added that (around 1 cup) into the blender, added some frozen banana for more creaminess as well as lime for some zest, and blended until a creamy, refreshing, naturally sweet (no additional sweetener needed) ice cream was the result!

I had no idea there was such a thing as Watermelon Day, but apparently it was last Wednesday, August 3rd, and this recipe happens to be right in time to celebrate the watermelon!
And who doesn't love fresh, juicy watermelon? The sweet flavour that explodes in your mouth with every bite... for me there's nothing that tastes more than summer than watermelon. Except perhaps for watermelon ice cream. Today, I have a super refreshing and cooling watermelon mint sorbet for you! A marriage of the complimenting flavours of sweet watermelon and fresh mint.
