What's better than juicy ripe peaches on a hot summer's day? Oh, right. Ice cream!
I already made both peach ice cream and strawberry ice cream in the past, and I love both (sweet strawberry nicecream is just the best), but this time I combined the two - ummmm, yeah! Who needs full fat, super sugary ice cream or dessert when you can make this delicious "nicecream" in just minutes and still satisfy your sweet tooth?!
The best part is that it has no added sugar and relies simply on the natural fruit sugars for just the right amount of sweetness that is refreshing and a perfect guilt free treat especially at this time of year. I never sweeten smoothies so why sweeten ice cream? It's a mix of ice cream and sorbet, but feel free to add almond milk or coconut milk for more creaminess!
Ingredients
3 ripe bananas, peeled and frozen
1/2 cup frozen peaches
1/2 cup frozen strawberries
fresh peaches and strawberries to garnish
Instructions
Break your frozen bananas into pieces if they aren't already chopped. Add them to your food processor or high-speed blender and process until it begins to become creamy. Add the frozen peaches and strawberries (you could also use fresh ones, but the result will be more like a thick creamy smoothie then instead of scoop-able ice cream), and blend until there are no more frozen fruit pieces in there.
While I clean up my food processor, I usually like to store my nicecream in the freezer so it doesn't melt away in the meantime - just a quick tip for you guys :)
Top with fresh strawberries and peaches, and enjoy!
OMG.
I'm a little blown away right now.
