As i was procrastinating by thinking about what to make/bake for Mother's Day as well as my boyfriend and I's monthly anniversary, i stumbled across the 5-ingredient "Ferreraw Rocher" truffles by Erika @loveliveraw on instagram - who by the way is the most beautiful human on earth and a huge inspiration to me. Unfortunately - or fortunately? - she didn't give any instructions or measurements on how to create her delicious looking truffles (the only instructions are to "mix dates, hazelnuts and cacao"), so i had to come up with my own. #fromscratchwithlove
So here it is!
Dates, hazelnuts and cacao - and i also added a teaspoon of Maca powder because it is supposed to have aphrodisiac qualities, and i don't mind sparking things up a bit ;)
"RAW-CHER" TRUFFLES
inspired by Erika @loveliveraw
Preparation time: 15 mins
Main ingredients: dates, hazelnuts, cacao
difficulty level: easy
makes: around 15 truffles
suitable for: vegan, lactose-free, gluten-free, soy-free, raw food, paleo
Ingredients
around 150g soft dates (if not soft, soak in hot water for 15 minutes)
around 100g hazelnuts
around 1 tsp of Maca powder (optional)
around 2-3 tbsp cacao powder
tigernut (chufa) meal or crushed nuts for coating
Instructions
Before preparing, soak dates in warm water for about 15-30 minutes. Drain dates and in a food processor, mix dates, hazelnuts and cacao to a sticky and smooth dough. Roll balls, hide a hazelnut in each ball and chill for an hour.
Roll the firmed balls in crushed nuts, or - as i did - in tigernut meal. Place in the refrigerator for another hour or so to harden up.
Eat them straight away or freeze them if you want them that way.

TIPS:
Instead of tigernut meal, use almond meal or shredded coconut.
Instead of raw cocoa powder, use carob powder which doesn't contain any caffeine.
Add a teaspoon of almond butter or other nut butter.
