Quick 4-ingredient ice cream without ice cream maker

Still
in the spirit of the Reggae Jam Festival i just came back from, i come
to you with this "Mojito" Mint Lime Ice Cream! Along with Zombie, Planters Punch and Licor 43 with milk or passion fruit juice or orange juice, Mojito used
to be my favourite cocktail. That was of course back when i was still
drinking alcohol on a regular basis - and having a slight addiction to
drinking when i was feeling down or depressed, actually...
- Fun fact: apparently Mojito was also a favourite drink of author Ernest Hemingway, according to wikipedia (maybe i should read some more of his works, or drink some more Mojito before i sit down to write a text, haha!) -
Anyway, this ice cream does not contain any alcohol of course, but only bananas, mint, lime and natural sweeteners. I honestly prefer this over the actual cocktail - mainly because the ice cream doesn't leave that burning after-taste that hard liquor leaves in your mouth. And because it's way better for your health and your body AND it is frickin tasty, just saying.
Ingredients
4 ripe bananas, frozen
juice of 1/2 to 1 lime
about 12-15 fresh mint leaves
2 tbsp agave syrup OR coconut or raw cane sugar - i use coconut blossom sugar
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
First: Chop the mint leaves and juice the lime. I first used only 1/2 lime but later added another squeeze or two.
Then place your frozen banana pieces in a blending machine or food processor, add the lime juice and blend for half a minute or so. Now add the chopped mint leaves and the sugar, and blend for a few more minutes until you get a nice creamy stiff consistency.
Using a spatula, spoon or ice cream scoop, fill your ice cream into a pretty bowl - i'm using my ice cream scoop and a wine glass -, and voilà! You got yourself a shot of (virgin) "Mojito" Mint Lime Ice Cream :)
