Quick 2-ingredient ice cream without ice cream maker
Preparation time: 5 mins + 3 hours freezing time

I know, there is a recipe for Lemon Ice Cream on my blog already, but i re-created my recipe, and this time it was even better than before, so i wanted to feature it again on my blog! And you can never have enough of ice cream, now can you?
Sometimes, lemon ice cream from the shop can taste a bit "chemical" and artificial, but since we are using real lemons for this, it does not taste artificial at all. Also, i'm a bit proud to be using a hand-picked lemon (from the Canaries) for this, which looks sort of like a yellow flower when cut open, so i had to feature this recipe, you know? :)

Ingredients
3 large ripe bananas, chopped and frozen
juice of 1/2 large or 1 small organic lemon
zest of around 1/4 organic (!) lemon
dash of orange juice (optional, to get the blender going)
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), add your lemon juice, lemon zest, and - if your blender is struggling to process everything - a dash of orange juice or grapefruit juice. You could also add a tiny bit of sweetener (like 1 tsp of agave syrup), but personally i prefer the fresh, tartly taste. That's what summer tastes like :)
(I mentioned this in my first take on lemon ice cream, and i'll say it again: Make sure you use organic lemon - otherwise you will take in all the pesticides and fungicides that are sprayed onto non-organic citrus fruit!)
Blend until creamy smooth and spoon into your favourite bowl. I promise, if you like(d) dairy-based lemon ice cream, you will love this one! It is absolutely delicious and refreshing! Enjoy with a glass of fresh orange juice :)
Another lemon ice cream variation you should try is Lemon Coconut Ice Cream!
{4 frozen bananas + juice of 1 lemon + 2-3 tbsp shredded coconut}
Topped with buckwheat groats and chia seeds, yummers!
