suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, low-fat
I eat nana ice cream pretty much all day erry day! Mmm mm so good! And this here is one of my current go-to nicecreams. It is creamy and chocolaty but also sort of "fresh" and "fluffy" due to the added soy yogurt and the mint, and it's not too sweet.
The consistency is gorgeously fluffy and creamy, and the combination of mint and chocolate has always been my favourite :) It doesn't really taste like "after eight" yet, but close. In any case, it's delicious and will make your morning better. Try it!
Ingredients
4 ripe bananas, chopped and frozen
5 fresh mint leaves
3 tsp cacao powder
3 tbsp soy yogurt (you can use your own homemade soy yogurt)
1 tsp cinnamon
1 tsp Maca powder (optional)
Buckwheat groats and cacao nibs on top (optional)
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), add your soy yogurt (for a nicer texture but also to get your blender going), and process.
Then add mint leaves, cacao powder, cinnamon and optionally Maca powder, and blend for a few more minutes.
Transfer nicecream into your favourite bowl and spoon away! I garnished mine with a handful of buckwheat groats and cacao nibs, but that's totally up to you of course!
Note: This is part of my raw vegan Ice Cream Galore this month!
