Quick 3-ingredient ice cream without ice cream maker
Preparation time: 5 mins + 3 hours freezing time

I've been wanting to make this ice cream for ages now: Cherry + Chocolate! How perfect can sweetness be? It's basically a mixture of my Sweet Cherry Ice Cream and one of my personal favourites, Stracciatella Ice Cream. And the best part is, all you need for this crazylicious dessert (or in my case: breakfast) is bananas, cherries and dark chocolate or cacao nibs!
I love love love the hidden crunch of the chocolate bits/cacao nibs in this! :)
Ingredients
4 large ripe bananas, chopped & frozen
400g cherries, frozen
around 50g crushed cacao beans (cacao nibs) OR 50g shaved bitter chocolate *
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
Easy peasy: Put frozen banana pieces into your blending machine and blend until it starts to become smooth.
Then add the frozen cherries along with the crushed cacao nibs (crush cacao beans by simply blitzing in a coffee grinder, food processor or blender). We actually used dark vegan chocolate (i recommend one similar to the one pictured below - purely made of cacao and coconut blossom sugar!). Since the cacao is quite bitter compared to milk chocolate, you could also add your preferred sweetener - i didn't though because my super-ripe bananas and the cherries were already sweet enough.
Blend for a few minutes until everything becomes a creamy mass - don't let the blender get to hot though, or else your ice cream will start to melt, haha! Using a spatula, spoon or ice cream scoop, fill everything into a nice bowl, sprinkle with cacao nibs or chocolate shavings, and scoop away immediately! :)
Now that's a sweet healthy treat. Yummers!
* NOTE: Cacao nibs are cacao beans that have been peeled and crushed.
Since our local organic shop had run out of cacao nibs that week, i fell back on a bar of organic dark chocolate (ingredients: cacao mass, cacao butter, coconut blossom sugar, all from organic agriculture. Cacao solids: 92%). i simply shredded the chocolate into fine flaky slivers using a mandoline. Gotta be flexible, folks!
