Today is my last day of uni for this semester. Which is a reason to celebrate and eat nicecream, don't you think? Okay, anything and everything is a reason for me to eat nicecream.
I've made Peanut ice cream, i've made Hazelnut ice cream, i've even made Walnut ice cream... why have i not tried Almond ice cream yet?! Guess what? It's nutty and creamy and absolutely delicious. I also added some apple and cinnamon to make it a bit more christmas-y but that's obviously not mandatory.
I would think that Cashew ice cream would make a pretty amazing ice cream too...

Ingredients
3 large ripe bananas, frozen
around 3 heaping tbsp (50g) ground almonds
dash of almond or hazelnut milk (optional)
1 apple, frozen (optional)
Cinnamon
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), add your almonds (whole or ground), a splash of nut milk to get the blender going, and blend. Blend, blend, blend until creamy smooth. You could probably also toss in some carob or cacao powder for a more chocolate-y, christmas-y taste. Or cacao nibs! I should try that next time...
Using a spatula or spoon, scrape your Almond ice cream into a dessert bowl, sprinkle some cinnamon and ground or chopped almonds on top, and enjoy!
NOTES: Omit the apple and cinnamon, and add 3 or more fresh Medjool dates! This way you will get the most amazing Caramel Ice Cream, with gooey date/caramel chunks in it!
Big thanks to Dawn for featuring me on her Wonderful Wednesday blog hop! This makes my day :)
Note: This is part of my raw vegan Ice Cream Galore this month!
