Quick ice cream without ice cream maker
Preparation time: 5 mins + 3 hours freezing time
Main ingredients: banana, raspberries, matcha
difficulty level: easy
serves: 1-2
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"
Okay, i think NOW i tried pretty much every possible variation of combining Raspberry ice cream, Chocolate ice cream and Matcha ice cream, haha! May i present to you this amazing bowl of Raspberry + Matcha Mint Ice Cream, also known as UNICORN ICE CREAM!
Ingredients
Raspberry ice cream:
2-3 frozen bananas
1 cup frozen raspberries
dash of soymilk
Matcha Mint ice cream:
2-3 frozen bananas
1 tsp Matcha powder
around 5 chopped fresh (!) mint leaves*
Topping:
Coconut blossom sugar
Buckwheat groats
Raspberries
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
* i made the mistake once to use Peppermint essential oil instead. Just ONE single drop, and the whole thing tasted like medicine and just plain disgusting -.-
Instructions
Blend half frozen bananas in a high-speed blender or food processor until creamy consistency, add a splash of water if necessary. Add chopped mint leaves and Matcha powder to the blender - i switched to a food processor a couple of weeks ago because it makes the ice cream super fluffy (just blend as you normally would in your high-speed blender, and then blend on low speed for an additional 3 minutes!). Scoop ice cream into bowl and place in freezer.
Blend remaining frozen bananas in your blender/food processor until creamy consistency, add a splash of water if necessary to help the blender. Add in frozen raspberries and blend.
Take the Matcha Mint ice cream out of freezer. Scoop Raspberry ice cream into the bowl, swirl it together a bit and sprinkle with toppings. I actually tried to create a Yin Yang pattern but miserably failed. It still looks pretty though, doesn't it? Hahah! Tastes great anyway :)
