Quick ice cream without ice cream maker
Preparation time: 5 mins + 3 hours freezing time

Hey there blogger peeps! I'm back from my hiking trip, and oh my god am I thankful for a pair of warm, dry shoes! It was a wonderful, wonderful weekend BUT we were surprised by half a meter of snow in the mountains (!!), making it hard to walk, especially with heavy backpacks on, and the slippery snow and ice ended up ruining my right knee and my left ankle so we had to slow down and didn't make it to the end of the hiking trail :'(
The woods and the snow and the sun and the crisp air were magical though! I will upload photos of that later... oh and we slept in an open hut, no tent, just sleeping bags and heaps of snow around us! ❄️⛄️❄️
Anyway, this is totally off schedule, but here's what i was doing this morning, right after we came home from our trip + family visits: Chilling in bed in my PJs and spooning away my first celebratory nicecream since last Wednesday! Maca Peanut Cinnamon nicecream with cookie dough bites.
Why Maca? Frankly, because it is said to have aphrodisiac properties ;) So: Why not?!
And for garnishing i used bits of my last raw vegan Bunny Biscuit that we made with my parents on Easter Monday! Here's what they looked like:
Ingredients
3 large ripe bananas, frozen
1 tsp Maca powder
1 tsp cinnamon powder
1 tsp pure, organic peanut butter
1 tsp agave syrup (optional)
a dash of soy milk or water to get the blender going
for garnishing:
pieces of bunny biscuit, chopped
more peanut butter
also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)
Instructions
Place the frozen banana pieces in a blending machine or a food processor (i'm using a food processor), and blend blend blend!
Then add the dry ingredients (cinnamon, maca) as well as a teaspoon of peanut butter, if you want it to be even more rich and nutty, and blend again until everything becomes a creamy mass.
Using a spoon, spatula or ice cream scoop, transfer the ice cream into your favourite bowl, garnish with peanut butter drizzle and bits of bunny biscuit dough, and enjoy immediately! :)
