Raw vegan, gluten-free, non-dairy Chocolate Truffles with 3 ingredients
[This is a no-bake recipe that will only take minutes to make!]

suitable for: vegan, lactose-free, gluten-free, paleo, raw food, and delicious "even so"
Ingredients
For the light, fruity version:
- 1 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup dried apricots or soft dates
For the dark, nutty version:
- 10 dates, pitted, chopped
- 1/2 cup almonds (hazelnuts, walnuts or pecans work too)
- 2 heaping tbsp raw cocoa powder
- more raw cocoa powder to coat the truffles
Instructions
These raw vegan truffles are so easy to make: Simply toss your ingredients into a food processor or a highspeed blender and process into a chunky mass. Then form into ball or bar shapes. So easy!
Refrigeration is not mandatory, but i would keep them in the fridge for around 30 minutes to firm up until they're ready to be eaten.

For your chocolate truffles, roll the newly formed truffle balls in cocoa powder until well coated and set aside. Should be stored in the fridge, lasting at least 1 week.
