Raw vegan, gluten-free Energy Balls with 3 ingredients

Ingredients
For the light, fruity version:
- 1 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup dried apricots or soft dates

For the dark, nutty version:
- 10 dates, pitted, chopped
- 1/2 cup almonds (hazelnuts, walnuts or pecans work too)
- 2 heaping tbsp raw cocoa powder
- more raw cocoa powder to coat the truffles

Instructions
Simply toss your ingredients into a food processor or a highspeed blender and process into a chunky mass. Then form into ball or bar shapes. So easy!
Refrigeration is not mandatory, but i would keep them in the fridge for around 30 minutes to firm up until they're ready to be eaten.

For your chocolate energy balls, roll the balls in cocoa powder until well coated and set aside.
Store in the fridge for about 1 week.
